Potatoes are packed with vitamins C, B1(thiamine), B2 (riboflavin), B3, and B6, Potatoes are also high in Potassium, and contain a vegetable protein which has essential amino acids.

  • Potassium: The predominant mineral in potatoes, is concentrated in the skin, and has benefits for heart health.
  • Vitamin C: The main vitamin found in potatoes. Boost the body’s ability to fight off illnesses by strengthening the immune system
  • Folate: Concentrated in the peel, is essential for cell growth and metabolism.
  • Vitamin B6:  Is involved in the formation of red blood cells.
  • Vitamin B1: Thiamine is required by our bodies to use carbohydrates properly. And it is useful for treating inflammation of the nerves.

Because it is a complex carbohydrate, it is a source of energy to the body and the fiber from potatoes is an excellent aid to digestion which helps the body rid itself of waste. Potatoes are also low in fat, so they can be used to help with weight loss, while still leaving the body to feel full.
