Banana Bread with a vegan twist

It can’t get no easier than this simple Banana Bread recipe that will surely put a smile on your face. I got this recipe from 7 Secrets cookbook. I decided to make it last week adding a few extra ingredients of my own. My mother stopped by and we had a few slices with a cup of tea.

1 cup whole wheat flour
½ cup unbleached flour
¾ teaspoon salt
1 tablespoon baking powder
1/3 cup chopped walnuts
½ cup coconut milk
½ cup mashed ripe banana (I think I used about 4 over ripe bananas)
1/3 cup honey OR ½ cup sugar and 2 tablespoons water.
(It’s only optional but I also added 1 teaspoon of brown sugar and ½ teaspoon of vanilla extract to give it a boost of love).

1. Mix dry ingredients in a medium-sized bowl. Add walnuts.

2. Briskly stir liquid into dry ingredients and pour into an oiled loaf pan. Bake at 350 degree for about 40- 45 minutes, or until knife inserted in center comes out clean.
