Baked Oatmeal

Having a nutritious breakfast can make a difference in how we function throughout the day. My girlfriend Diane, has created a cookbook with so many healthy vegetarian/vegan dishes that will change your lifestyle for the better. This healthy baked oatmeal recipe is filled with wholesome oats, nuts, raisins, coconut and pineapple juice. Suitable for a light meal, but awesome as a make-ahead in advance breakfast treat. This hearty breakfast dish is satisfaction to the soul and will leave your belly full and your brain ready to go. I am so grateful to my girlfriend for sharing this recipe from her latest cookbook, Diane’s Kitchen and educating me on foods that helped put my disease in remission. Enjoy!

2 cups Oats
2 oz. Unsweetened pineapple juice
¼ C. Coconut
¼ C. Nuts (I like pecans or walnuts)
¾ C. Raisins
1Tbsp. Vanilla flavor (optional)
1 Tsp. Salt
4 C. Water
1/8 Tsp. Coconut flavor (optional)

Combine all ingredients in a bowl. Pour into an oil-sprayed casserole dish. Cover. Bake for 1 hour at 350 degrees.
